Composition of human fats

Oleic Acid

75%

Palmitic Acid

20%

Stearic Acid

They remain as mixed triglycerides, e.g. one glycerol molecule is attached to three fatty acid molecules of either similar or dissimilar varieties. Traces of other fatty acids are also present. Depot fats are more unsaturated under skin then in the deeper parts.
