Composition of human fats
Fat is chiefly composed
of the glycerides of various fatty acids and usually contains the following-
Oleic
Acid |
75% |
Palmitic
Acid |
20% |
Stearic
Acid |
05% |
They remain as mixed
triglycerides, e.g. one glycerol molecule is attached to three fatty acid
molecules of either similar or dissimilar varieties. Traces of other fatty acids
are also present. Depot fats are more unsaturated under skin then in the deeper
parts.
